I usually check proficiency in steep turns, slow flight, stalls, forced landing and other emergencies. And sometimes, I will ask the person to plan a little XC and see how he/she does with a diversion and decision making. Ask about their crosswind landing technique, etc. IMO, don't expect perfection...
