The 727's at Morningstar will be replaced by 757's starting late next year. If you were to be hired there now you would most likely find yourself out on the street when the last 727 is retired. The back seat is a dead end street, go find a flying job and log some real time.

Age wont be a problem with the current state of the industry. You would be a good candidate for Morningstar Air Express. Actually Morningstar has 5 Boeings, 5 Caravans and an ATR-42 in support of the Fedex contract it has had for almost 20 years now.
