For a good portion from 4:15 onward, the video is sped up and dubbed... clearly, which brings into question the other (less noticeable) parts of the video.

I agree... Flying VFR, I think I'd rather have no GPS and no Nav instruments, and have good up to date maps that I thoroughly studied before the flight and have them close to me during the flight. :? Confirm with the examiner.
My guess is he'll want you to keep the turn going.
For whats its worth I did my multi ride about 2 months ago. I kept the turn going and got a 4.

I have very limited experience on floats.
I did my float rating on a PA12 Super Cruiser. It made sense and it sure wasn't hard.
Lots of fun, but I can't attribute it to the stick in particular.
IMO, you'll enjoy learning to flying floats regardless of the airplane.
