pkofman1, I am surprised your insurance company won't approve your proposed instructors. I needed an instructor with time on type in a mooney when I did my transition training. I couldn't get one sorted, but they were fine with my local, high time instructor who had time on everything but a mooney....

I'm sure there's lots of guys at Jazz and Sky with training experience but no instructor rating. In any event, to the OP: don't fly IFR altitudes around airways and you should be fine. If you're VFR, go direct and avoid IFR airways, I don't see any advantage to flying them.
