60 is a PC way of saying all the bank you can pull off, without getting fired. YANK or Pull on the stick on the other hand isn't quite so PC.

80 is the speed you seek. The poh will indicate that this speed will give you about a 10 to 1 glide ratio. The poh also says on this graph that the speed is 85 mph cas. Piper needs to pick a speed to publish and go with it.
