Also with aviation you can moonlight fairly easily when you get established. If flying is what you love, go do it. Just make sure you know what's required (most likely moving north) before you do this. That said there is a solid demand for pilots so getting jobs is a lot easier.

I would think stalling into a headwind would recover cleaner then a tailwind, but all I've done over the last 15 years is avoid them (stalls) in the sim. I can honestly say from my training / instructing days this topic never came up.

As a side note, if you can't exceed the 21 kt crosswind limit of your training AC you shouldn't be thinking at all about instructing and focus on mastering the basics.
