There's no reason not to use an excel spreadsheet.

This. Or make it portable and use Google Sheets, then you can update it from your phone.

Bear in mind it's the person who conducts the training who is is charged with maintaining the record, not the student:
A person who conducts flight training for the issuance of a private pilot licence, a commercial pilot licence or a flight instructor rating — aeroplane or helicopter shall, for each trainee, maintain a pilot training record that meets the personnel licensing standards.

The student needs to be able to enter their solo flights and a Google Doc does not provide any form of security in preventing a student from changing information, or giving themselves authorizations they shouldn't have.

1. The student doesn't need to be able to enter their solo flights. It's convenient if they can, but the person providing the training is still responsible for the entries, and it's perfectly acceptable for them to make them all.

2. A PTR doesn't need security. It's a record of training to send to TC, and to carry between schools. If it's wrong, it's wrong, too bad. When it is sent to TC it is sent by the person providing the training, who has a chance to (and should) verify the contents are accurate, by which points the pages should be signed off by both the CFI (or delegate) and the student. The document that officially certifies the experience requirements are met is the application form for the PPL, CPL, or Instructor Rating, as the case may be.

3. No element of flight is validated or authorized by having parts of the PTR filled out. Some parts stand as records of authorization, but the authorization (eg for first solo) comes from the instructor, and is valid even if that section isn't filled out.

Nonsense, as photofly outlines above.
