All of those things are ever changing everywhere. Best bet is that you probably have a friend of a friend who works at a place you're wondering about so seek them out and ask. Get multiple sources though, as some folks enjoy their own misery while others wear rose coloured glasses 24/7 and be sure to listen to the good and the bad. Try and find people whose personalities you identify with, they'll make the best analogs for how you would see the job if you were in it.

That's great advice, thank you. Not sure yet if I'm jumping from the military but the postings looming ahead are NOT to my liking... prairies, no thanks!

Any unionized company will have its collective agreement available there: http://negotech.labour.gc.ca

That will cover pretty much anything you can think of.
