CPL-A, Multi Engine IR, 700hrs. What job markets are open out there with this? Only about 150 PIC in pistons (172), but have about 350hrs on multi engine turbo prop.
Also, anyone has more info/links to transfer all this over to EASA? My understanding is there are about 16 exams. Navigating EASA's website I couldn't find to much info. Any schools in Canada that can help do all the exams and provide study material? Or do I need to get in touch with a school in EU? My understanding is at 700hrs I can have the frozen ATPL and seen quite a few airlines hiring FO's at even 300hrs.

As long as you’re still employed or you were laid off due to covid or something like that with 350 hrs multi engine turbine you should be able to find something in the 703 or 704 world. Lots of places are hiring now. Good time to get the résumé out to places in the north as most of them need pilots.

Sorry to potentially disappoint you, but I'm an EASA pilot and without 1000/1500 TFT actually, you could not find any jobs here... Unless you know somebody, maybe, you could... First jobs with 300hrs are very rare, maybe in few months (years?) it will improve bc of the """shortage""" but for sure, don't be in a rush
And I know a few concerning the frozen ATPL, you could pass your exams remotly if there is some official office in Canada (I know there is some in the US bc some flight schools dispense the EASA training bc of EASA regulation approval) and you have to convert all for sure 100% and pass the 14 subjects in less than 18 months with less than 3 fails for each subject, otherwise you'll have to start all over again.
Hope it helps, if needed tell me I'll explain you with pleasure
