I have had conversations over my many years in the airline industry about this very subject.All the pilots that have made it to the Sim evaluation level are there because they have the qualifications the "company" requires.
The primary goal in the Sim Evaluation is to have a first hand look at your interpersonal skills, crew interaction or cockpit resource management what ever buzz word you wish.These check pilots have had lots of experince are mainly looking at how "social" you are and that your the type they wouldn't mind going for a beer with after the flight.
So focus on being engaging with your stories and insites on the various subjects that come up during the time your exposed to these Sim Evaluators/Instructors.Good Luck!
