I've been waiting for a thread like this. I enjoy the following:

AeroWeather, for METAR and TAF etc
ColdAir, for cold temperature corrections on IFR approaches
Shazam, for identifying that song you just can't put your thumb on
AroundMe is handy, but I have the version that doesn't have advertisements. I haven't updated it since they started with that. It helps you find nearby places like banks, bars, gas stations, hotels, movie theatres etc shows address, phone # and route on map. Has been very handy, but sometimes leaves out important entries as it uses just yellow pages listings.
Knot Guide, for tying just about any knot step-by-step
X-Plane, for killing time
TouchCalc, because I hate the default calculator
TanZen, a tanagram puzzle game also for killing time
Google Earth, not Google Maps!

apps I got that I could due without:

Dictionaire - free dictionary but very limited in vocabulary
Speed Dial 1 - I think it has ads now. Just as fast to dial the damn number
PocketGuitar - just a gimmick - NOT free
Horizon - a really terrible artificial horizon. If you want one for kicks check out "Attitude" which is much better
iChalky - gimmick
Audi A4 - a very lame game
iE6B - I just don't use it
TrackThing - garbage
FltPlan - airport facility directory but geared towards a US audience
