There's a bunch of threads on here for regular excel files, most you can download for free. But for mac specific, everyone seems to be raving about this one:

Haven't tried it myself, but their website looks cool!
I use LogTen Pro, works great and integrates nicely with the iPhone/iPod Touch. There's a demo on the site you can try first.

Great ideas, thanks!
I am now trying QT Logbook.
I should also explain that I have a paper logbook that would take me a month of Sundays to transcribe.
