I remember pre 9/11 having a few rather nice jump seat rides including landing at Heathrow at night. Very pretty. The real fun however was my son, on one cross canada trip to see my parents as an unacompanied minor (on A/C) managed to sit through much of the flight and landing in Vancouver. I never did figure out who the pilot was to thank he or she but a general hats off to the A/C pilots that used to go that little extra mile.
Now there is nothing remotely interesting about a long flight.. well except perhaps on the asian carriers

They don't even have the ATC chanel anymore .. jeeze .. I used to love listening to that stuff and its was very educational too.
