Hello,
Just a quick question. I have a CPL with multi IFR and am planning on renting an american registered C182 to build a few hours on that type of plane going VFR. I was wondering if I am able to log it as PIC with my Canadian CPL if the owner of the plane is in the right seat and I will be flying in American Airspace?

Seat occupied is immaterial.
Its a US registered aircraft in US airspace, and a US licence is required for you to be the designated PIC.
That said the FAA have this strange rule about "manipulator of the controls," which allows for multiple persons to log PIC time.

How I understood my license is that the CPL is good for all single engine non high performance aircraft. Does that mean only Canadian registered aircraft in that class and category?

No. You can fly a Canadian registered aircraft anywhere, or an aircraft registered in another country in Canada.
