Do employers care about time in experimental aircraft?
If I were to buy a Avid or Rans s6 for example with floats, and put a 100 hours of float time on it and apply to a job requiring 100 float hours, would the employer care that the time you built was in an experimental or is float time float time, same applies to other jobs such as those requiring 250 hours pic for example.

They are still real aeroplanes, so the time counts. Plus you possibly have more real world decision making experience if you own your own plane, vs renting from a school that may have strict weather limits, and not allow multi-day rentals.

In Canada those aircraft are called Amateur-Built. Experimental is a different category altogether.

I don't think Amateur Built vs Certified will have any effect on the way an employer looks at your time. The weight of the aircraft might have some bearing though. Your 100 hours in a 1200 pound airplane will not be considered the same as someone with 50 hours on a 3500 pound airplane. One thing for sure though, if you are the only one applying with significant float time, they won't care about how or on what you built that time.

Back in the before times, I had an FO who built a lot of his time in an amateur built aircraft. Company didn't care. Total time was total time when it came for the first few hundred hours. If you are going to build some time and you have the money it is a fun way to do so.
It isn't going to set you apart from other pilots who have already worked commercially but it might be an advantage over the large pool of newby pilots.

Some employers will care, some won’t. There’s no reliable way to predict who’s who without knowing them. Once established within a company the pilot with diverse experience and a history of giving a damn will usually excel over the average... if they want to.
