IFR Recency
The 24th month on my IFR rating has just gone by. Can I still fly as a co-pilot for an IFR operation? Assuming I'll be offered a PPC and go left seat will that be enough to renew my rating?

An IFR PPC ride will renew an IFR.
You would not be able to act as an F/O on an IFR Flight until your IFR was renewed.

If I'm not mistaken, a PPC ride would not be required, only an instrument rating renewal. I once got my IFR renewed in a simulator on a type I was not endorsed on and had never flown before.

For all intents and purposes, a PPC ride is an IFR ride on a particular type,with the addition of stalls.

You do not have to renew your IFR.
A simple PPC ride will renew it automaticly.

Even though most PPC rides include the IFR renewal, it is NOT automatic.

Ok, this may seem very silly, but it doesn't hurt to ask.
Going to flight safety, does it renew any Canadian IFR?? I think after you do the course you go back to your company and do the ride which will renew it. Not the course alone? Correct me please!

Depends. Doing the Otter? Recurrent or initial?
If recurrent, then you can ask FlightSafety if they can provide an examiner, and they can conduct a PPC, and renew your IFR. If Initial, for the PPC you have to complete a circling approach and 3 circuits in a real airplane. I don't know if just the IFR can be done on a sim ride in it following the initial training. I'll ask.

I did my recurrent at Flight Safety in Wichita, I was told it would only renew my FAA IFR not my canadian, as they dont have an instructor certified by TC.
