Charring Meat May Boost Risk of Pancreatic Cancer
TUESDAY, April 21 (HealthDay News) -- You may love your steak well done, but eating burned or charred meat may increase your risk of pancreatic cancer, a new study suggests.
Researchers used data on the meat intake, preferred cooking methods and doneness preferences of nearly 63,000 participants taking part in the Prostate, Lung, Colorectal and Ovarian Multi-Center Screening Trial
Over the course of nine years, 208 developed pancreatic cancer.
Meat-eaters who preferred their steak very well done were almost 60 percent more likely to get pancreatic cancer compared to those who ate steak less well done or did not eat steak.
Researchers then estimated carcinogen intake based on overall meat consumption and doneness preferences. Those with highest intake had 70 percent higher risk than those with the lowest intake.
Frying, grilling or barbecuing meat to the point of charring can form carcinogens, which do not form when meat is baked or stewed, explained Kristin Anderson, an associate professor at the University of Minnesota School of Public Health.
The study was to be presented Tuesday at the American Association for Cancer Research annual meeting, in Denver.
Anderson suggesting cooking meat thoroughly enough to kill bacteria but avoiding charring. The precursors of cancer-causing compounds can also be reduced by microwaving the meat for a few minutes and pouring off the juices before cooking it on the grill.
"We cannot say with absolute certainty that the risk is increased due to carcinogens formed in burned meat," Anderson said. "However, those who enjoy either fried or barbecued meat should consider turning down the heat or cutting off burned portions when it's finished."

In the first study, Dr. Rashmi Sinha, a researcher with the Iowa Women's Health Study, says they found no association with total meat consumption or red meat consumption — but they did find a two-fold risk of breast cancer in women who consumed the most-well-done meat compared with those who ate less-cooked meat.
The studies were presented at a meeting of the American Association for Cancer Research.
This might be plenty enough linkages for me, who can wait another nine years for them to say, "it does increase the risk"?

Good thing medium rare means well done to me... I like rare or blue rare if it's the right cut.

If you do the math, it means that if you have 63,000 people and 208 get cancer, that's a third of a one percent chance of getting it. Statistically pretty crap to show a correlation.
Now were all of the people in the group non-smoking, non-drinking, non-obese, no cancer running in the family people? And there was a control group that ate and behaved exactly like the experimental group? This university statistics student doesn't buy the hype.
I'll do whatever the hell I want to do with my meat.
I'll watch it, I'll season it, if it gets to hard, I'll beat it till its soft, but I'm not gonna do a damn thing differently when I cook up a nice fat steak over the fire pit when I go camping!

I love studies like that. 208 out of 63,000 and we're not going to look at other criteria such as over diet, etc.

So there was something in the news awhile back about the experts saying our population should switch our diets to less meat and eggs and more non animal products because it would help starving people. If thats true, and they want us to switch then they would try to take away our meats by poisoning it or by scaring us.Don't worry about it lad, yer just tenderizing it.
What this country needs is a meat registry. Get Alberta to finance it.
I'm thinking because we had a meat recall from Safeway a couple of weeks ago, but I haven't heard anymore since.

Well since we're on fun cow stats, did you know a cow produces more greenhouse gases in one year than a Rangerover driven 20,000 km?

You can feed a cow and it's calf a diet of total grass, nothing else. There's no need to ever feed a cow corn or soybeans, and you can pasture land to grass that would never support row crops like soybeans. The problem with the PETA idiots is they don't know shit about agriculture. Beef bound cattle only eat grain for the last 1/3 or so of their life, and then only part grain. Most of what they get is silage or brewers grain from ethanol plants and ground hay or alfalfa.
